The production of "extra-vergine" olive oil

The farm produces olive oil from the varieties leccino, moraiolo and frantoio: the most common olive trees in the area. Thanks to the favourable climatic conditions - exposure to the south and the fresh marine summer breeze -  the plants are healthy and diseases are very limited. All this helps to give a sweet taste of artichoke and a delicious perfume to the oil.
Olive growing is traditional in this region and because of the arrangement of terraces, the size of the trees and the slopes, the work is all hand made and its result is an extra high-quality product. The moment of greatest activity in the farm is from October to November when the olives must be harvested and pressed at the traditional mills. Actually the oil is available all year around at the farm but in this season you can buy the “olio novo”, the fresh pressed oil (extra-vergine means oil coming from the first olives pressure) which has got a characteristic spicy hot flavour.
